"Sometimes you might get a person who takes over a business and they may not like it, so it's best to do a little tester - maybe work in a food place themselves - just to get a feel of what to expect."

On the sacrifices entailed in the food service industry...

"For example, working over the weekends; you need to sacrifice your time rather than going out, enjoying yourself down the nightclub!

"You need to sacrifice your time. You may come here in the early hours of the morning and start preparing the doughs for example, preparing all the vegetables, etc."

On the transition to new ownership...

"Originally it was a pizza shop and I decided to leave it as the same because obviously you have to go through the application process with the local council.

"I've introduced new items on the menu, for example I'm doing straightforward pizza and chicken curries as well. This is based on customer demand - this is what they wanted. 

The challenging thing is to provide the customer with the right level of customer service, quality of food and value for money

On harnessing the internet to attract orders...

"I've just joined up with Just Eat and Hungry House [online takeaway booking portals].

"That's helped me out a lot because most of the ordering takes place online, which saves all the legwork for me as well because it has all the customer details on there."

Summing up his mission statement...

"The challenging thing is to provide the customer with the right level of customer service, quality of food and value for money."
